The days are long and waiting to be filled – but so is your stomach! Before you can seize the long summer days, you need to feed the beast. These pancakes will fill you up without weighing you down and get you to through whatever your summertime activity du jour is.

  • Scant 1/2 cup flour
  • 1 Tbsp sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sour cream
  • 2 eggs
  • 1/2 tsp vanilla extract
  • zest from 1/2 lemon
  • 1/4 – 1/2 cup mixed berries
  • butter
  • syrup

Combine flour, sugar, baking soda, and salt in a bowl. In a separate bowl, beat eggs with vanilla and lemon zest. Add sour cream to dry ingredients and stir until just incorporated. Add egg mixture and mix – being careful not to over mix. The batter should be lumpy.

Now, first major decision of the day: to add berries to the batter, or reserve them to be scattered on top of cooked pancakes? If you want them in, gently fold the berries in now.

Heat a skillet over medium heat and melt butter in the pan. Drop 1/4 cup of batter in the hot skillet at a time, cooking until bubbly on the first side, flip, and then golden brown on both sides.

They say breakfast is the most important meal of the day, so get it started on the right foot. As you’re cooking up summer morning goodness, take a minute to plug in the old speakers, and rock out to these sunny jams.

To begin, I give you Givers. This fresh new southern-fried indie pop group bring a playful energy to their music, infusing it with surprises and improvisations. As you’re whipping up that pancake batter, be sure to get creative and have fun with it. And don’t forget the syrupupup.

Lady O’Day sings and scats like a sassy morning bird on this nu-jazz rework by UK producers RSL. No need for fancy blenders or beaters, just shake your thang and that batter will mix itself.

Beatfanatic cook it up with this funky Latin-tinged jam (mixed by the renowned Thievery Corporation). While I can’t be certain whether or not they’ve sampled on this piece, I do suggest you sample those delicious pancakes before you serve.

The Asteroids Galaxy Tour implore that golden sun to shine with a sparkling little tune, “Golden Age.” Heineken took note, recently enlisting the band for an epic commercial. Does beer go with pancakes? Indeed, I think it does.

Alright, I’m just going to say it. I have a crush on Star Slinger. The freshest of beats pair with lush vintage instrumentation and soulful re-imagined vocal sampling for a signature style that cannot be mistaken. Enjoy waking up to a bright new “Mornin.’”.

I was recently introduced to the quirky and eclectic stylings of Miss Rachel Goodrich. Sweet retro indie pop infuses this bouncy tune. The recording feels very homemade, much like your tasty breakfast. Sure you could just add water to a pasty pre-made mix, but if Goodrich simply added lyrics to a vapid ready-made pop track, it wouldn’t be nearly as satisfying.

And lastly, for your listening and viewing pleasure, the astounding and beautifully sunny Snow White remix by Pogo, entitled “Wishery.” Catherine’s favorite part is the dear pumping water. Enjoy!
